Lavender 75
The French 75, born in WWI Paris and named after a powerful field gun, combines Gin (or alternatively Cognac), citrus, and Champagne for a cocktail that’s as elegant as it is punchy. This is a simple twist on the classic – the lavender syrup lends itself to a delightfully floral and refreshing sip any time of year!

- Add dried lavender to the pan. Bring the mixture just to a simmer, then remove from heat.
- Steep for 20–30 minutes, depending on how strong you want the lavender flavor.
- Strain the syrup through a fine mesh sieve into a clean jar or bottle, discarding the lavender.
- Cool completely, then seal and refrigerate for up to two weeks.
Lavender 75
- Chill your coupe or flute in the freezer or fill with ice water while you prepare the cocktail.
- Add gin or cognac, lemon juice, and lavender syrup to a cocktail shaker.
- Fill the shaker with ice and shake vigorously for 8–12 seconds (don’t add sparkling wine to the shaker).
- Discard the ice/water from your glass and double-strain the shaken mixture into the chilled coupe or flute.
- Top gently with 2.5–3 oz sparkling wine — pour slowly so it keeps its bubbles.
- Garnish with a lemon twist (express the oils over the drink) and/or a small lavender sprig. Serve.
